1. Til ke laddu/til ladoo:

An easy ladoo recipe made with desiccated coconut, sesame seeds, and jaggery. This sweet dish is best done in the winter and is made with intriguing ingredients. Grated ginger can be used for flavour. 

How to make it:

  1. Roast sesame seeds in a hot pan. Remove once done. 
  2. Similarly, even roast desiccated coconut. 
  3. Mix the roasted coconut and roasted sesame seeds. 
  4. Prepare jaggery syrup by cooking it. 
  5. Mix the mixture of roasted coconut and sesame seeds along with the jaggery syrup.
  6. When the mixture is warm, start preparing the ladoos. 

2. Makar Sankranti khichdi: 

A bunch of green vegetables are mixed in with rice, black urad dal, sesame oil or any other cooking oil, and seasonings. The ideal accompaniments are curd and baigan pakora.

How to make it:

  1. Rinse urad dal and rice in separate bowls for around 15 minutes.
  2. In a pressure cooker start by heating sesame oil and gradually add your favourite green vegetables, along with red chillies, cloves, cinnamon and black cardamom.
  3. Later add the rinsed urad dal and red chilli powder for enhancing its flavor. 
  4. Then add rice and gradually water, salt and garam masala to give a good flavor. 
  5. Let the khichdi cook until 2 whistles. 
  6. Serve your khichdi with other tasty accompaniments.

4. Coconut barfi:

  1. Mix the coconut and natural sweetener together in a nonstick pan till the sweetener melts and bubbles.
  2. Gradually mix in the cinnamon and almond powders until a smooth mixture forms.

  3. Warm the butter in a separate pan before adding the jaggery, salt, and a tiny bit of ginger
  4. Stir rapidly after adding the peanuts to the mixture.
  5. Pour it onto a different dish that has been butter- or oil-greased.
  6. Divide it into more manageable pieces when it has cooled.

6. Medu vada: 

This is the ideal South Indian breakfast, which is also offered throughout the festival, and it is made with black urad dal.

How to make it:

  1. In a blender, combine the ginger and dal. To get a thick batter, continue to add some amount of water.
  2. Stir thoroughly after adding the batter, green chilies, and coriander to another bowl. When the oil inside the pan is heated sufficiently, transfer it onto the container, seal it, and store it.
  3. Make a wide ring with the dough, and then place it in the oil.
  4. This is deep-fried until each side is crunchy and uniformly browned.
  5. Repeat this procedure until all of the batter has been converted into vadas.
